Renée’s Crab Croquettes

Main Ingredient: Fish/Seafood

Meal Type: Appetizer/Starter, Side dish
   
½  cup Renée’s Gourmet Caesar Dressing
2 cans crab meat, squeezed of juice
2 tbsp finely chopped chives
  juice and zest of one lime
2 tbsp chopped cilantro
¼ cup bread crumbs
eggs, beaten
2 cup flour
2 cup panko breading
2 cup canola oil for frying
  salt and pepper to taste
  Ingredients – Lemon Pepper Aioli:
1 tsp black pepper
¼ cup Renee’s Gourmet Caesar Dressing
2 tsp lemon juice
 
  • Blend crab meat, chives, lime, cilantro, Renée’s Gourmet Caesar Dressing and bread crumbs.
  • Form into balls the size of golf balls, then into patties and place in freezer for 20 minutes to set.
  • Dip alternately into flour, egg and breadcrumbs.
  • Heat oil to 350° F/177°C and fry patties for approximately 2 minutes, or until they are deep golden in colour.
  • Pat dry on paper towel and serve with a dollop of aioli.
  • Mix lemon pepper aioli ingredients and refrigerate until serving.
  • Tasty Substitutions:
  • Replace the crab with lobster
  • Vegetarian option: replace crab with finely chopped mushroom
  • Instead of breading and pan frying, stuff crab mixture in a Portobello mushroom
