Venetian White Bean Bruschetta

Main Ingredient: Vegetable/Vegetarian

  Ingredients - Bruschetta:
1 can white kidney beans, drained and rinsed
tomato, seeded and diced
¼  red onion, chopped
1 tbsp Italian parsley, chopped
1 tsp lemon juice
clove garlic, crushed
2 tbsp olive oil
  salt and pepper to taste
  Ingredients – Crostini:
white baguette, sliced into 1” rounds, ¼” thick
½ cup Renee’s Gourmet Caesar Dressing
 
  • Toss ingredients together and serve on crostini.
  • Preheat oven to 325° F/163°C.
  • Place baguette rounds on a baking sheet.
  • Brush the baguette rounds with Renée’s Gourmet Caesar Dressing and bake approximately eight minutes or until golden. Cool on a baking rack.
  • Tip - Renée’s Bruschetta Bar: A variety of Renée’s Gourmet flavoured crostini with a selection of toppings such as chopped tomato, black and green olives and your favourite cheeses.
  • Tasty Substitutions: Flavour crostini with different dressings like Renée’s Greek Feta or Renée’s Chunky Blue Cheese.
  • Time Saving Tips: You can make the crostini beforehand (good for approximately one week in tightly sealed container).
